Here's the dish to serve with last week's MAM Fit recipe for Puris bread.  Make it and be happy!

3 T. oil - Heat in large saucepan on medium-low

Saute: 1 large onion, chopped

Add and brown lightly:   (Note, for best flavor,  add 1 1/2 times as much of next 4 ingredients)

4 cloves minced garlic

2 T. ginger root, finely chopped

Stir in:

2 t. whole cumin seed

2 t. curry powder

2 t. salt

1 fresh hot chili pepper (opt'l)

Add and stir together well with spice mixture:

2 c. red lentils, rinsed

Add:

6 c. water

2 large potates, sliced

1 large bunch spinach, chopped

Bring to boil.  Reduce heat and simmer, partially covered, until lentils and potatoes are tender. Place in a serving dish and sprinkle 2 T. cilantro over the top.  Serve with hot rice, tomato and cucumber slices, and Puris bread. Serves 6.
